10min Penne Arrabbiata.
This is a super quick and delicious recipe from my ‘10min Pasta’ series. The idea of this series is to share pasta recipes that can be whipped up in the time it takes to cook some dried pasta!
A handful of store cupboard ingredients transforms penne into this simple but spicy pasta dish. An absolute favourite in our house.
Recipe serves 2.
Ingredients.
200g penne pasta, or another short pasta of your choice
A few tbsp salt, for the pasta water
About 3tbsp olive oil
1 garlic clove, finely chopped/minced
1 mild red chilli, deseeded & chopped
250g tinned chopped tomatoes, roughly 2/3 of a 400g tin
2 tbsp fresh parsley, roughly chopped
Grated parmesan, to serve (optional)
Freshly ground black pepper
Equipment.
Medium sauté/frying pan
Medium/large saucepan
Chopping board & knife
Wooden spoon
Sieve/colander
Fine grater/zester
Method.
Firstly, put your pasta on to cook in a large saucepan of generously-salted, boiling water. Bring it back to the boil and set a timer for the lower end of the packet instructions e.g. If the packet says ‘7-9mins’ - set a timer for 7mins
Meanwhile, add the garlic, chilli and oil to the sauté/frying pan and stir constantly on a medium heat for about 2 mins
Turn the heat up high and add the chopped tomatoes & a large pinch of salt. Continue to simmer & stir until the tomatoes have reduced by about a third and the pasta has cooked
Drain the pasta and add it to the tomato sauce with some freshly ground black pepper (to taste). Stir together on the heat for another 1-2mins until completely combined and the sauce is sticking nicely to the pasta
Serve the pasta with fresh parsley and some freshly grated cheese (optional)
